Couscous with Dried Cranberries and Mandarin Oranges

Ingredients:

  • 1 cup whole wheat couscous
  • 2 cups of fresh squeezed orange juice
  • 3 tablespoons of lemon juice
  • 2 teaspoons fresh grated orange zest
  • 1 teaspoon fresh ginger (ginger in a jar)
  • ½ cup dried cranberries
  • 1 15 ounce can of Mandarin Oranges in water. (If you use light syrup, rinse it off)
  • 1/3 cup sliced unsalted almonds

Directions:

  1. When cooking couscous, use orange juice instead of water.
  2. After cooking couscous, add lemon juice, orange zest, ginger and dried cranberries. Gently stir in mandarin oranges and almonds.
