Mixed Fruit Cobbler

Original recipe from Leanne Campbell – The China Study Cookbook

Ingredients:

For the filling:

  • 4 cups berries; if frozen, thaw first (use blueberries, blackberries, raspberries, or a mixture)
  • 3 tablespoons maple syrup

For the crust:

  • 1 cup whole wheat pastry flour
  • 4 tablespoons date sugar
  • 1 teaspoon baking powder
  • ½ cup almond milk

Directions:

  1. For the filling, preheat the oven to 400 degrees F
  2. In a large bowl, combine the berries and the maple syrup. Spread in a “9 x 9” baking dish.
  3. In a separate bowl, for the crust, combine the flour, date sugar and baking powder. Add the milk and stir to mix.
  4. Spread the mixture over the berries (don’t worry if they aren’t completely covered) and bake until golden brown, about 25 minutes. Let cool for 10 minutes before serving.
