BBQ Soy Curls

Ingredients

  • 2 cups Soy Curls (Butler Foods)
  • 2 cups boiling low sodium vegetable broth
  • 1 1/2 cups low-sodium BBQ sauce of your choice

Preparation

  1. Pour boiling low-sodium vegetable broth over Soy Curls in a large bowl. Let sit for 10 minutes or more.
  2. Drain and add BBQ sauce.
  3. Heat thoroughly and serve

Although Butler Foods advertises that that their soy curls consist of nothing but non-gmo soybeans, I had questions about the process the beans went through to obtain the consistency of meat.   Here is the response I received from Butler Foods:

“We simply soak the whole Soy Beans in pure spring water (no chlorine or fluoride) and then stir the beans while cooking and then dry at low temperature to keep the nutrients intact. No chemicals or additives”

I’ve concluded that this product qualifies as minimally processed. Although soybeans are naturally high in fat (40% of total calories), the calorie density of the rehydrated product is ~ 533 calories per pound. (Much lower than most meats)
