Cauliflower Soup

Ingredients:

  • 1 large head of cauliflower cut into small florets
  • 5 medium potatoes, peeled and diced
  • 1 large onion diced
  • 4 medium carrots peeled and diced
  • 2 celery ribs diced
  • 1 carton (32 oz) vegetable stock
  • 1 teaspoon garlic powder
  • 1 tsp turmeric
  • 1 tablespoon cinnamon
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ tsp crushed red pepper flakes

Directions:

  1. In a Dutch Oven over medium-high heat, bring all ingredients to a boil and stir until vegetables are tender (approximately 20 to 30 minutes.)
  2. Remove from heat and cool slightly
  3. Process in batches in a blender or food processor until smooth. You can add more water or stock for desired consistency.
