Cherry Apricot Oatmeal Cookies
Serves 12
Ingredients:
- 1 large, ripe banana
- ½ cup raw almond butter
- ¼ cup chopped medjool dates (about 6)
- 1 teaspoon vanilla extract or pure vanilla bean powder
- 1 teaspoon almond extract
- ½ cup unsulfured dried apricots, chopped
- ½ cup unsweetened dried cherries, chopped
- 2 cups old fashioned rolled oats
- 2 tablespoons ground flax seeds
Instructions:
- Preheat oven to 350 degrees F.
- Place banana in a medium bowl and mash well, stir in the almond butter, dates, vanilla and almond extract until well-combined. Add the apricots, cherries, oats and flaxseed.
- Mixture can be poured on parchment paper-lined 8 x 8 inch baking pan. Bake for 15 minutes or until golden brown, cool, then cut into squares.
