Curry Rice Bowl

Ingredients:

  • 7 oz. Brown Rice
  • 15.5 oz can of chick peas
  • 5 oz. bag organic spinach
  • ¼ cup organic carrots
  • ¼ cup Pistachio seeds
  • ¾ cup almond milk
  • 2 – 6 oz cans of tomato paste
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric
  • ½ teaspoon ginger
  • 6 cloves of garlic
  • ½ red onion, diced

Direction:

  1. Cook rice
  2. Drain and rinse chick peas (Garbanzo Beans)
  3. Add all ingredients together
  4. Stir in large frying pan or wok
