EASY BLACK BEAN SOUP

This is one of the tastiest, easiest black bean soups ever!

Ingredients:

1 15. oz can of black beans, drained and rinsed

1 cup of salsa

1 1/2 cups of vegetable broth

1/2 teaspoon cumin

1 c frozen corn, thawed

dash of hot sauce (optional)

  1.  Place 1 cup of beans, salsa, broth and cumin in a blender, puree until smooth.
  2. Transfer to a saucepan and add remaining beans,  (I tend to add more), corn and hot sauce to taste.
  3. Stir to combine and heat thoroughly over low heat.
  4. Once warm, serve with chopped cilantro if so desired!
