Gingerbread

Adaptation of recipe from Food For Life – Neal Barnard MD

Ingredients:

  • ½ cup raisins
  • ½ cup chopped pitted dates
  • 1-3/4 cups water
  • ¼ cup organic agave nectar + 1 tablespoon of raw sugar
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ¾ teaspoon grated nutmeg
  • ¼ teaspoon ground cloves
  • 2 cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Instructions:

Combine dried fruits, water, sugar, and seasonings in a large saucepan and bring to a boil.  Continue boiling for 2 minutes, then remove from heat and cool completely.

Preheat the oven to 350 degrees Fahrenheit

When fruit mixture is cool, mix in dry ingredients. Spread into a nonstick 9-inch square pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
