Lemon Blueberry Date Balls

Ingredients:

  • 30 medjool dates (pitted)
  • 1/2 cup dried blueberries
  • 1/2 cup unsweetened shredded coconut
  • 1 cup walnuts
  • zest and juice of 1 lemon

Directions:

Add nuts to food processor and pulse until they are like coarse bread crumbs. Set aside.

Add dates, blueberries, lemon zest and juice then pulse until slightly sticky, then add coconut and chopped walnuts and process until combined.

Roll into balls or press dough into a 9×9 pan lined with parchment paper to cut small squares. Refrigerate up to 1 week or freeze to keep longer.
