Lentil Biscuits

Ingredients:

  • 1 cup red lentils
  • ½ cup sunflower seeds

(soak lentils and sunflower seeds for at least 2 hours)

  • 1 onion
  • 2 cloves garlic
  • ½ teaspoon cumin
  • ¼ teaspoon turmeric
  • 1 tablespoon curry
  • Pinch of cayenne
  • 1 tablespoon dried parsley

Directions:

  1. Puree all ingredients except lentils, sunflower seed and parsley in food processor.
  2. Drain lentil/sunflower mixture and add to onion mixture, pureeing until smooth. Add parsley
  3. Drop by spoon onto a baking sheet at 350 degrees for 20 to 25 minutes

*Variation; can use Italian seasoning in place of Indian seasoning.
