Linguini with Peanut Sauce

Ingredients:

½ cup natural peanut butter (oil floats on top)

¼ cup low sodium soy sauce

¼ cup Rice Vinegar

2 Tablespoons Agave or maple syrup

¼ cup water

¼ tsp ground ginger or ½ tsp Asian seasoning

3 garlic cloves, minced

Carrots

Red and yellow peppers

Scallions

Box of whole grain linguini

Directions:

Mix peanut butter, low sodium soy sauce, rice vinegar, agave syrup, water, ground ginger, and garlic cloves in blender.

Cook whole grain linguini according to instructions. Drain and rinse with cold water.

Cut up carrots, red & yellow peppers and scallions into small pieces

Toss pasta, veggies and sauce

Chill

Note: Add a bit of red pepper flakes for a spicy kick.
