Millet Soup

  • 1 cup millet
  • 5 or 6 cups low sodium vegetable broth
  • 1 tablespoon broth
  • 3 scallions, chopped
  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon tomato paste
  • 1 (10 ounce) package frozen vegetables
  • Black pepper
  • 14 cup parsley, chopped

Directions

  1. In a medium saucepan, heat 2 cups of low sodium vegetable broth to boiling over high heat.
  2. Add millet.
  3. Reduce heat to lo. Cook, covered, until millet is tender and most of the liquid is absorbed, 25-30 minutes.
  4. In a large saucepan, heat 1 tablespoon of the broth
  5. Add scallions, onion and garlic.
  6. Cook over medium heat until soft about 5 minutes.
  7. Add 3 cups low sodium vegetable broth and tomato paste. (See Note)
  8. Add vegetables.
  9. Reduce heat to low and simmer, covered for 15 minutes.
  10. Add salt and pepper, cooked millet and parsley.
  11. Cook 5 minutes longer.

NOTE: I used 4 cups instead of 3.
