Millett Citron Vert

Ingredients:

  • 7/8 cup millet
  • ¼ large onion or ½ small onion diced
  • 3 cloves garlic chopped
  • 2 medium sized beets
  • 2 carrots chopped
  • 2 cups of low sodium tomato juice or vegetable juice.
  • Juice of 1 lime
  • Onion powder
  • Garlic powder
  • Turmeric
  • Black pepper

 

Directions:

  1. Put millet, onion, garlic beets, carrots and low-sodium tomato or vegetable juice in a rice cooker and prepare it as you’d cook rice.
  2. When it is done, vegetable juice should be fully absorbed. Add the juice of 1 lime and the spices in the amount that you prefer.
  3. Stir very well

This can be enjoyed cold, but it is best served warm.

For a “cheesy” taste, add 2 to 3 tablespoons of nutritional yeast
