Mushroom and Rice Soup (Crockpot)

Ingredients:

  • 4 cups of vegetable or mushroom broth
  • 3-1/2 – 4 cups mushrooms, sliced
  • ½ cup onions, chopped
  • ¼ cup Ketchup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon date sugar
  • 1 tsp Worcestershire Sauce
  • 1/8 teaspoon mustard
  • 1-1/2 – 2 cups cooked brown rice
  • 1 cup frozen peas

Directions:

  1. Combine all ingredients, except rice and peas , in a Crockpot
  2. Cook on low for 4 hours
  3. Add rice and peas, continue to cook on low for 1 hour
