One Pot Fajita Pasta

Ingredients:

  • 1 Red Pepper (sliced)
  • 1 Yellow pepper (sliced)
  • 1 Orange Pepper (sliced)
  • 1 Onion (sliced0
  • Unsalted Vegetable Broth
  • ½ Teaspoon salt
  • 1 Teaspoon pepper
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Cumin
  • 1 Tablespoon Garlic Powder
  • 5 cups Almond Milk (Unsweetened)
  • 1 lb. Whole Grain Penne Pasta
  • 3 Tablespoons of Nutritional Yeast

Directions:

  1. In a large saucepan, faux-sauté peppers and onions in a little vegetable broth until soft.
  2. Add all seasonings and stir well
  3. Add almond milk. Stir well and bring to a boil.
  4. Add penne pasta and cook to desired softness. Stir often while pasta is cooking
  5. At the very end, add nutritional yeast and stir well.
