Peanut Butter Coconut Balls

Ingredients:

  • 1/3 cup figs (7 or 8 figs)
  • 1-2 tablespoons soy, hemp or almond milk
  • 1 cup old fashioned oats, chopped
  • ½ cup natural, no-salt added peanut butter
  • ½ cup shredded unsweetened coconut
  • ½ cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts

Directions:

  1. Blend figs and non-dairy milk in a high-powdered blender. Add enough milk for mixture to reach a thick, syrupy consistency.
  2. Mix blended fig mixture and remaining ingredients in a large bowl. Roll mixture into 14 balls. (Or save out the chopped nuts to roll the balls in.) Refrigerates on a plate lined with waxed paper about 1 hour.  Store in the refrigerator.
