Quinoa Pizza Balls

All you do is cook up 2/3 cup dry quinoa w veg broth in place of water. Chill it.

Then add

1 can drained, fork mashed(leave a lot of texture though) red kidney beans

6 ounce can of tomato paste (make sure it does not contain oil)

Chopped fresh basil- (a little less than ¼ cup)

Dried oregano

Chopped fresh parsley

Garlic powder

Sea salt to taste

Mix all ingredients together with your hands

Roll into 1 TBSP size balls and place on non stick cookie sheet (can line w parchment paper if not non-stick)

Bake at 350 degrees F for 25-35 mins until they are nicely browned

Tips:

  • Make sure you chill the quinoa before adding ingredients and rolling into balls
  • Don’t overcook quinoa

Another variation

  • Shape them into patties and put on 100% whole wheat roll.
