Quinoa Tabbouleh

Ingredients:

  • 1 cup cooked Quinoa
  • 2-3 plum tomatoes, diced
  • 1 orange pepper, diced
  • 1 cup of peeled, seedless cucumbers, diced
  • 1 tablespoons of fresh lemon juice
  • ½ cup of green onions, thinly sliced
  • 1 cup of garbanzo beans (optional)
  • 1 cup of fresh parsley, chopped
  • 2 tablespoons of fresh mint, chopped
  • 1 tablespoon of fresh garlic, diced
  • ¼ teaspoon of finely ground black pepper

Directions:

Mix all ingredients.
