Southwestern Black Bean Pasta Salad

Ingredients:

  • 16 oz. whole grain pasta
  • 1-1/2 cups black beans
  • 1-1/2 cups organic corn
  • 1 red bell pepper, diced
  • ¾ cup zucchini, diced
  • 1 cup grape tomatoes, quartered
  • ¾ cup red onion, diced
  • 1 avocado, diced
  • Salt and pepper to taste

Directions;

  1. Cook pasta – let cool completely
  2. Chop all vegetables – place in large bowl
  3. Place all ingredients for cumin dressing along with ingredients for jalapeno dressing – blend well (See dressing recipes below)
  4. Pour dressing over pasta and vegetables. Start with enough to coat, then add more before serving.
  5. Cover ansd store in refrigerator – add avocado before serving – the longer this sits – the better this salad is (within reason of course)

Creamy Cumin Ranch Dressing

  • ¾ cup raw cashews, soaked
  • ½ cup water
  • Juice of one lemon
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic
  • ½ teaspoon onion powder
  • 1 teaspoon dill
  • 1 teaspoon sniped chives
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika

Directions:

  1. Blend in blender until creamy

Creamy Jalapeno Ranch Dressing

Creamy Cumin Dressing – doubled

  • 2 jalapeno peppers
  • 1 clove garlic
  • 2 teaspoon cumin
  • 2 teaspoons smoked paprika
