Spaghetti Rice

What You’ll Need:
  • 8 ounces sliced fresh mushrooms
  • 1 cup chopped onion
  • 1 cup (about 4 ounces) whole grain spaghetti, broken into 3-inch pieces
  • 1 1/2 cups whole-grain rice, uncooked
  • 3 1/2 cups vegetable broth
  • 1/2 teaspoon Mrs. Dash
  • 1/8 teaspoon black pepper
What to Do:
  1. In a large saucepan over medium-high heat, heat 3 tablespoons water; add mushrooms and onion, and faux sauté until lightly browned.   Add more water as needed.
  2. Add remaining ingredients, mixing well.
  3. Bring mixture to a boil, reduce heat to low, cover, and cook 20 to 30 minutes, or until all liquid is absorbed.*

*If rice is not fully cooked,,add water or broth and cook until rice is adequately tender.
