Spicy Greens and Beans

Ingredients:

  • Head of Cabbage
  • 2 Heads of Escarole
  • 11 oz. pkg Baby Spinach
  • 1 – 15 oz can of white beans
  • 3 cloves garlic, minced
  • ¾ teaspoon sweet paprika
  • 2 tablespoons date sugar
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1/8 – ¼ teaspoon Cayenne pepper (to taste)
  • 1 teaspoon crushed Anise seeds
  • ¾ cup red wine
  • ½ teaspoon crushed red pepper
  • ½ teaspoon granulated garlic
  • ¼ teaspoon ground nutmeg.3 cloves garlic, minced

Directions:

  1. Slice Cabbage and cut up escarole
  2. In a large (wide) pot, put approximately 8 to 10 cups of water
  3. Cook cabbage first, on slow boil
  4. Add all spices and wine
  5. Once cabbage is tender, add escarole and spinach
  6. Let simmer until greens are tender (to your preferred tenderness)
  7. Add 15 oz can white beans and let cook another 5 minutes

This goes great with a serving of corn bread.
