Strawberry Almond Muffins

Ingredients:

  • 2-1/2 cups unsweetened applesauce
  • ¾ cup date sugar
  • 2 tablespoons pure honey
  • ½ cup almond milk
  • 2-1/4 teaspoon baking soda
  • 1-1/2 teaspoon pure almond extract
  • ½ teaspoon salt
  • 2 cups strawberries chopped
  • 3 cups white whole wheat flour

Directions:

  1. Preheat oven to 350 degrees F.
  2. Line 20-24 muffin pans with paper liners
  3. In a large bowl, mix applesauce, date sugar, honey, almond milk and almond extract.
  4. Add flour, baking soda and salt
  5. Fold in strawberries
  6. Pour into baking cups (about ¼ cup)
  7. Bake approximately 24 to 26 minutes.  Let stand in the pan for 5 minutes then cool on rack.
