Sweet Potato And Black Bean Burgers

Ingredients:

1-1/2 lbs. sweet potatoes, Mashed

1/3 cup millet (or quinoa)

1 cup old fashioned oats

15 oz. can black beans, rinsed and drained (approx 2 cups)

½ small red onion

2 tsp cumin powder

1 tsp chili powder

1 tsp smoked paprika

½ tsp cayenne powder (optional, to taste)

Directions:

  1. Cook and mash sweet potatoes
  2. Cook millet, let cool
  3. In a large bowl (or mixer), combine sweet potatoes, millet, black beans, onion and all spices. If not using a mixer, use a potato masher or your hands to mix well. It is ok to smash beans into piece.
  4. Add the oats and mix well with a big spoon until the mixture holds together when you shape a portion into a patty. Chilling mixture for a while may help to form patties easier.
  5. Shape burgers, should get 8 to 10 burgers (1/2 cup ea. will give you 8 burgers)
  6. Place parchment paper on a cookie sheet. Place burgers on parchment paper.
  7. Bake at 400 degrees for 10-12 minutes, flip, 10-12 minutes OR Cook in a NON-STICK ceramic frying pan until golden on both sides. Burgers should be firm and browned before serving.
