Taco Burgers

Ingredients:

  • ¾ cup chopped walnuts
  • 1 1/2 cups cooked pinto beans
  • 1 cup cooked lentils
  • ¼ cup cilantro
  • 1 tablespoon chili powder
  • ½ to 1 teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon smoked paprika
  • 1 – 2 tablespoons salsa
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • 2 garlic cloves, minced
  • ¼ cup low sodium vegetable broth

 Directions:

  1. Preheat oven to 375 degrees F – line cookie sheet with parchment paper
  2. In skillet, heat vegetable broth – faux sauté pepper, onion and garlic 5 to 6 minutes.
  3. Pulse walnuts until a fine crumb in food processor, Add beans, lentils, cilantro, chili powder, salt, cumin, oregano, smoked paprika and 1 tablespoon salsa – pulse. If too dry, add more salsa.
  4. When peppers and onions are done, add to bean mixture and pulse a few times.
  5. Form into patties – bake 25 to 30 minutes, flipping after 15.

Note: by making patties “slider” size, they will hold together better.
