Chocolate Cherry Cookies

Chocolate Cherry Cookies

Ingredients:

  • ¾ cup dates, soaked for 15 minutes in warm water, then drained
  • 1 very ripe banana
  • 2 tablespoons raw almond or cashew butter
  • 1 cup old fashioned oats (see note)
  • ½ cup almond flour (purchased or ground from raw almonds)
  • 2 tablespoons natural cocoa powder
  • ½ cup chopped unsweetened dried cherries
  • 1 teaspoon alcohol-free vanilla or almond extract

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Add dates to food processor and pulse until they are blended and start to form a ball. Add in the banana and almond butter and process until well-combined..
  3. Add in oats, almond flour, cocoa powder, and vanilla extract and process until mixture forms a dough, If mixture is too wet, add more oats to adjust consistency. Add dried cherries and pulse again until just mixed.  Chill dough for 10 minutes.
  4. Drop by tablespoon onto a non-stick, or parchment paper lined cookie sheet. Bake for 15 – 17 minutes.

NOTE: For a smoother texture cookie, the oats may be ground into flour using a food processor or a high-powered blender.
