Ancient Grain Salad

Ingredients:

  • 1 cup freekeh (or quinoa or farro)
  • 2-1/2 cups water
  • 1 cup shelled edamame (see note)
  • ½ cup diced red bell pepper
  • ¼ cup chopped red onion
  • ¼ cup raisins or currants
  • 1 lime, juiced
  • 2 tablespoons balsamic vinegar
  • ½ cup pineapple, diced

Instructions:

  1. In a medium saucepan, combine the freekeh and water, bring to a boil.  Reduce heat to low, cover and simmer for 20-25 minutes or until freekeh is tender and water has been absorbed.  Let cool.
  2. Transfer freekeh to a mixing bowl and stir in remaining ingredients.  Chill before serving.

Note: Cooked green peas or other varieties of cooked beans may be substituted for the edamame.
