Bean Pancakes

This recipe is an adaptation of a bean waffle recipe from the “What The Heck Do I Eat Now” web site. If you’re a bean hater, this recipe can add the goodness of beans to your diet. The beans provide moistness without the beany flavor. Warning: If you’re looking for fluffy, these ain’t for you.

This recipe is gluten free if you use gluten-free oats.

Ingredients:

  • 1 cup of canned white beans rinsed
  • 4.5 cups water
  • 2 tbsp whole flaxseeds
  • 2 tbsp baking powder
  • Pinch of salt
  • 1 tbsp vanilla
  • 2 tbsp cinnamon
  • 3.5 cups rolled oats
  • 2 apples grated or put in food processor
  • 1/4 cup finely chopped walnuts

Directions:

  • Place beans and water in blender and blend for 5 – 6 minutes until completely smooth
  • Add flax seeds, baking powder, salt, cinnamon and vanilla and blend again until fully incorporated.
  • Add the oats and blend for another minute
  • Remove the blender from the stand and add your crushed walnut pieces and grated (processed) apples and gently stir to combine
  • Heat non-stick griddle, non-stick pan or ceramic frying pan.
  • Spoon batter like you would any pancake batter

Top with small amount of maple syrup and/or blueberry jam

This recipe makes lots of pancakes. You may need to freeze some for future meals.
