Cornmeal Pancakes

Cornmeal Pancakes

1 cup boiling water

¾ cup organic whole grain corn meal

1 cup almond milk with 1 tsp of vinegar (apple or red wine vinegar)

2 Tbsp of ground flax + 6 Tbsp water

1 cup whole wheat flour

1 Tablespoon baking powder

1/4 tsp salt

¼ tsp baking soda

In a mixing bowl, pour boiling water over cornmeal. Stir and allow to sit for 5 minutes, stirring once or twice.

Pour in milk, add flaxseed and water and mix well

Whisk flour, baking powder, baking soda and salt together. Stir into cornmeal mixture.

Beat for 30 seconds or jut stir to mix.

Pour batter onto hot griddle. Bake for ~ 2 minutes per side; flip once.
