Curry Lentils

2 tsp ginger

2 cloves of garlic

1 Tablespoon curry

4 medium carrots sliced or chopped

1 large potato cut in pieces

1 cup red lentils

4 c low sodium vegetable broth

Black pepper to taste

Instructions:

Add all ingredients and bring to a boil, reduce heat and simmer until tender  (about 20 minutes)

Sprinkle with curry
