Garden-Fresh Salad

Ingredients:

  • 1 cup long grain brown rice
  • 4 ears of fresh corn, husked and silks removed
  • 2 cups cherry or gape tomatoes cut in half
  • 1-2 cups fresh arugula leaves or spinach
  • 1 cup red onion, cut into thin slices
  • 1 fresh jalapeno, seeded and thinly sliced (optional)

 

Directions:

  1. Prepare rice according to package directions and cool
  2. Grill corn and let cool. Trim corn off the cob by cutting close to the cob in long strips.
  3. Combine all ingredients and refrigerate for at least one hour before serving
  4. Drizzle your favorite fat-free salad dressing on top..
