No-Bake Apricot Bars

Ingredients:

  • ½ cup dried apricots
  • 1/3 cup unsweetened soy, hemp or almond milk
  • ¾ cup old fashioned oats
  • 1 cup raw cashews and/or almonds
  • 2 tablespoons raw sunflower seeds
  • 1 teaspoon ground flaxseed
  • 1 cup dates pitted
  • 1/3 raw cashew butter
  • 1 teaspoon cinnamon

Directions:

  1. Soak apricots in nondairy milk for an hour.
  2. In a food processor, process oats until coarsely chopped. Remove and set aside.
  3. Place nuts, sunflower seeds, and flaxseed in food processor and chop into small pieces
  4. Add dates and cashew butter to food processor and process until very well combined and smooth. Mixture will start to form a ball.  Add oat and nut mixture to food processor along with soaked, drained, apricot pieces and cinnamon, and combine.
  5. Press mixture into an 8 X 8 inch baking pan. Make sure it is well compacted.  Cut into bars.
