Raspberry Jam – (No Canning Required)

¼ cup water

½ cup chopped pitted dates

Place dates and water in blender and blend on high for 30 – 60 seconds

Add 2 Tablespoons of chia seeds

Add 1 cup of fresh raspberries

Pulse on low a few times

Add another cup of fresh raspberries

Pulse to get a thick, chunky consistency

Refrigerate for 30 minutes

NOTE: I had some overripe peaches lying around so I replaced the raspberries in this recipe with peaches. It made a great peach spread!
