Savory Oil-Free Vegan Fried Rice

Ingredients for the rice:

  • 3 cups uncooked brown rice
  • 2/3 cup roasted unsalted peanuts
  • ¼ cup minced garlic
  • 1 bunch green onions or 2 small onions, chopped
  • 1 cup celery, diced – (See note)
  • 1 cup carrots diced – (See note)

Ingredients for the sauce:

  • 9 tablespoons low-sodium soy sauce or tamari
  • 3 tablespoons peanut butter
  • ½ cup of maple syrup
  • 3 cloves minced garlic
  • 1 tablespoon chili garlic sauce (optional)

Directions:

  1. Cook rice in Instant Pot or rice cooker according to directions (or your preferred method).
  2. While rice is cooking, whisk together all sauce ingredients in a medium bowl.
  3. When rice is done, heat a few tablespoons of water in a nonstick wok or similar pan and add onion and garlic. Cook until translucent, then add peanuts and the rest of the veggies. Add more water as needed to prevent sticking.
  4. Cook for a few minutes until carrots are tender, but still have some crunch.
  5. Add sauce to wok along with about 2/3 of cooked rice and combine well.  If there is still liquid in the wok, add more rice until it is all used up to coat the rice.
  6. Continue to mix until everything is well combined and heated thoroughly.
  7. Serve and enjoy!

Note:  1 cup is a minimum.  You can use liberal amounts of these low calorie vegetables.
