Southwest Quinoa Salad

Salad Ingredients:

  • 4 cups Vegetable Broth
  • 2 Cups Quinoa
  • 1 Cup Cherry Tomatoes
  • 1 Cup Corn
  • 1 Cup dried cilantro
  • 1 Cup Orange Pepper, chopped
  • 1 Cup Black Beans
  • 1 Cup Red Pepper, chopped
  • 1 Large Avocado

Southwest Dressing Ingredients:

  • ½ Cup Cashews
  • ¾ Cup Almond Milk
  • 1 Tablespoon Apple Cider
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Cumin
  • ½ Teaspoon Chipotle Powder
  • 3 Tablespoons Lime Juice

Directions:

  1. Add vegetable broth to a pot, then bring to a boil.
  2. Add quinoa, reduce heat and simmer for 30 minutes.
  3. Place cooked quinoa in a bowl then top with cherry tomatoes, corn, cilantro, orange pepper, black beans, and red pepper.
  4. Add cashews, almond milk, lime juice, apple cider vinegar, garlic powder. Onion powder, salt, cumin and chipotle powder to a blender, then blend until smooth.
  5. Add dressing to salad, then top with avocado
  6. Enjoy!
