Sweet Potato and Apple Lasagna

  1. Preheat Oven at 350 degrees F
  2. In a small bowl, combine honey, cinnamon and brown sugar and mix well.
  3. Place apples in an appropriately sized casserole pan. Put some of the honey mixture on the apples.  Leave skin on and bake for approximately 45 minutes or when fork goes through apples easily.  Cut up apples. Do NOT mash them!
  4. Cut ends off sweet potatoes and wrap in aluminum foil leaving ends open.
  5. Place wrapped sweet potatoes on a cookie sheet and bake for approximately 2-1/2 hours or when fork goes through easily.
  6. Cut baked potatoes in half, peel skin off and then mash up with a fork.
  7. In a 9 X 13 baking pan, place a layer of lasagna strips, followed by a layer of apples, followed by another layer of lasagna strips, followed by a layer of sweet potatoes and so on.
  8. On the last layer, pour remaining honey mixture.
  9. Bake for 20 minutes or when sufficiently hot. (Cover with foil if needed)

 

Note: According to Cooks Illustrated, the six best baking apples are:
